Healthy Guilt-Free Greek Yogurt Cheesecake

I love cheesecake, although I also love feeling good about what I put in my body.  This dessert hits the spot, it’s cool creamy although, it is super easy to make!  Most importantly, this Healthy Guilt-Free Greek Yogurt Cheesecake is  loaded with healthy fats and protein.  To top it off my kids think they are getting a special treat every time I make it!  Many times, I have even served it to crowds and no one thinks they are eating healthy!

You will need:

Guilt-Free Crust:

2 C roasted almonds

4 dried dates

1/4 C coconut oil

 

Healthy Filling:

2 large lemons juiced

2 C whole greek yogurt (grass-fed)

1 can coconut milk https://amzn.to/3do0SIV

1/2 C local raw unfiltered honey

2tsp vanilla

1/2 tsp pink sea salt

Topping:

2 C organic frozen fruit of your choice (here I used cherries and mango)

1 lemon juiced and zested

1tbsp honey

1 tbsp arrowroot powder https://amzn.to/3ccCn0W

Directions:

To make the crust: combine all ingredients in a food processor and pulse until well combined.  Press crust into a springform pan and place in freezer while making the filling.

For the the filling, first warm lemon juice until hot, mix in gelatin and stir.  Combine remaining ingredients in the food processor, and process until completely combined, next mix in lemon and gelatin continue to mix for 2 minutes.  Pour into chilled crust and place in fridge, keep in mind this will need to chill overnight.

Create the Fruit Topping, buy combining all ingredients in a small sauce pan and cook for 5-10 minutes until it begins to thicken.  You may leave this chunky or blend for a smooth texture.  Spread over set filling and enjoy!
