Key Lime Pie
Healthier Key Lime Pie!
Ingredients
Crust:
1 C Chopped Pecans
3/4 C Chopped dates
1/2 C Shredded Unsweetened Coconut
To Make Crust:
Preheat oven to 350. Blend all ingredients in a food processor until a dough forms. Press into 9.5″ pie pan and pre-bake 10 minutes. Set aside too cool.
Filling:
2 Large eggs
1/2 C Key Lime Juice (fresh is best)
1/3 C Raw Unfiltered Honey
1/2 C Coconut Cream
1 scoop Key Lime Protein Powder (optional)
1 Lime Zested
2 Tbsp Grass Fed Gelatin
To Make the Filling:
Whisk eggs and honey until well incorporated. Mix in the rest of the ingredients and blend until smooth. Pour into crust and bake 30 minutes (check 1/2 way through and cover lightly with foil to avoid discoloration). Bake until just set, center will jiggle lightly when shaken. Cool 30 minutes before placing in fridge, it’s best to chill 2 hours to overnight before serving.
Whipped Coconut Cream
1 Can Chilled Coconut Cream
1 Tbsp Raw Unfiltered Honey
1/2 tsp Vanilla
1 tsp lime zest
To Make Coconut Whipped Cream
Chill mixing bowl and whisk 30 minutes before starting. Whip chilled coconut cream until light and fluffy and all lumps removed. Add in honey and vanilla. Top chilled pie with whipped coconut and sprinkle with lime zest. Chill until ready to enjoy!
